Kanzuri is a traditional fermented chili paste produced exclusively in Myoko, Niigata Prefecture, Japan, by the Tojo family. Before the family began selling this condiment in 1966, it was only made in small quantities for home use. Today, a six-year-old 2.5-ounce bottle sells for almost $20.
