UK National Health Service surgeon and author Dr Karan Raj shocked his TikTok followers by revealing a trick to make white bread healthier.

While dietitians generally recommend cutting out white bread because it contains additives that cause big blood sugar spikes, Raj says that freezing, thawing and then toasting a slice transforms its composition and its effect on your body.

“If you take a slice of white bread and toast it, you end up lowering the glycemic index of the bread,” Raj explained in a viral clip on his TikTok account @dr.karanr, with over 812,000 views . “This means it breaks down more slowly, causing blood sugar levels to rise more gradually.

The glycemic index (GI) is a measurement used to determine how much a food can affect your blood sugar, Healthline described.

High GI foods, including white bread, white rice and potatoes, cause an unhealthy rise in blood sugar levels.

In his clip, posted on March 31, Raj explained step by step how to lower the GI level of white bread.

“If you take a slice of white bread, then freeze it, then thaw it and toast it again, you could reduce the glycemic index of the bread by almost double,” Raj said.

Foods such as white bread, white rice, bagels, donuts and packaged breakfast cereals have a high GI, according to Harvard Health Publishing.

“All of this happens because more retrograded starch is formed, and retrograded starch is a type of resistant starch that is beneficial for gut health because it acts more like a fiber,” Raj said.

The TikTok documentary hack left many viewers wondering if they could add white bread back into their diet.

“Wait, frozen bread – (are you) saying that as a diabetic I can eat bread again?” » asked a woman.

“I always freeze my bread for toasting, so there is no waste. I didn’t realize it was beneficial,” said another TikTok user.

“This is the life advice I need!” » applauded a third viewer.

While other observers were fascinated by the bread hack, one viewer wondered if freezing, thawing and reheating other foods would have a similar effect.

“Refrigerating pasta and rice and reheating them the next day reduces sugars?????? True or false,” one asked.

“Absolutely reheated pasta has a much better glycemic index,” one responded. “I guess rice too, but be sure to cool and store it quickly, never let it sit at room temperature for long.”

And the New York Times would agree.

In an article published last year, the publication claimed that letting cooked pasta or rice cool in the refrigerator overnight turns natural starches into resistant starches.

These starches are associated with lower blood sugar, better gut health, and reduced cancer risk.

Because resistant starches aren’t easy to digest, they don’t raise your blood sugar as much as regular starch, an expert told the Times.
