The Pie Judge opens a bakery in Avalon Park – NBC Chicago

There is no doubt that Maya-Camille Broussard has talent. She already has a cookbook – Justice of the Pies – of the same name as her new bakery, which occupies a former dentist’s office in Avalon Park.
“I wanted to retain my fans, and over the past eight years I have achieved that,” Broussard said.
For starters, a sort of perfect peach cobbler.
“Currently we offer a peach cobbler topping with a soft serve and our salted caramel peach pie slice on top,” she said.
There are also cookies and cinnamon rolls, but the pies are the center of attention.
“My dad loved pies, but I loved everything: pound cakes, brownies, crispy treats – the brownies we serve are really special. I cook them in a very small skillet so everyone has an edge. We put dark chocolate and milk chocolate with Valhrona chocolate, so it’s very rich and melty,” she said.
Broussard faces more challenges than most business owners. On the one hand, she cannot welcome her guests and work at the same time.
“Because I can’t talk and work at the same time. I literally have to stop, look at you, because I rely on lip reading as a form of communication.
With so much new equipment, the business was also a target for thieves during construction.
“It was very disheartening and I started to wonder if I was supposed to open in this neighborhood,” she said.
But now, with a furnished space and a room for classes, Broussard is already receiving compliments from its new neighbors.
“People say, ‘I’ve lived here since 1969 and this is exactly what the neighborhood needs,'” Broussard said.
After a few weeks of practice, Justice for the Pies officially opens on Friday. For now, the bakery will only be open from Friday to Sunday.
