May 22 is World Paloma Day – and although palomas are popular all year round, today is the perfect day to toast Mexico’s favorite cocktail.

Little is known about the history of the tequila-based cocktail, according to TasteCocktails.com.

“Some believe it is named after La Paloma (“The Dove”), the popular folk song composed in the early 1860s,” the site says.

Others believe it was created by “legendary Don Javier Delgado Corona, owner and bartender of La Capilla, Tequila, Mexico.”

In its simplest form, a Paloma is made with tequila blanco, grapefruit soda or juice and lime.

Palomas are a tequila-based cocktail that is mixed with juices and sodas. This Paloma Negra recipe from Mr Black is mixed with a coffee liqueur.

1 oz Mister Black

1 oz mezcal or tequila

1 ounce pink grapefruit

Top with soda
